Fluffy, naturally sweet pancakes made with ripe bananas, offering a hint of caramel flavor as they cook to a golden-brown perfection. Ideal for breakfast or brunch, they’re easy to make, require just a few ingredients, and are a healthy, delicious twist on classic pancakes.
Preparation: 60 minutes
- Crush the banana until it is well mashed.
- Sift dry ingredients together in a bowl.
- Mix butter, milk, egg and banana.
- Pour wet ingredients into dry ingredients, then mix until smooth.
- Heat some oil in a pan on medium heat.
- Pour a scoop of batter into the pan, depending on the size you desire.
- Allow it to cook until edges are dry and bubbles start to form (~2 minutes), then flip and cook until browned on both sides.
- Repeat with remaining batter.
- Stack the pancakes on a plate, sprinkling a mixture of cinnamon powder and brown sugar in between them.
- Drizzle some syrup or sauce (I used Milkybar sauce) and garnish as you like.
